Biryani is a rice based food that contains meat or veggies as the core ingredient. Plenty of herbs and spices go into preparing Biryani and the meat and veggies are layered and baked. Biryani in Persian pertains to cooking and roasting and the word Biryani comes from the same.
Biryani stemmed from Persia and the legend has it that the tribals and nomads carried plenty of rice and meat on their extended journeys and they developed the culture of layering rice and meat and cooking them as one after smattering ample nuts and dry herbs. The traditional approach consisted of simmering and cooking the mix under fire and then burying it in sand for hours together before the dish was deemed ready. The traditional form of Biryani has since then been improvised and modernized according to convenience
Nowadays there are lots of kinds of Biryani prepared using a lot of diverse cooking styles. There are probably more than a hundred varieties of Biryani prepared using various combinations of meat and vegetables.

The unique flavours of the food availability, and cost, played a big part of the rise after the end of World War II, as many people were working for little money.
